Hubbard squash





“Nobody grows hubbard squash anymore, because the only ones who know what to do with it are in cemeteries.”  




This was said to us by an old New England farmer.





We recently proved this farmer correct.  Our CSA members were given a choice of 3 winter squash and few choose Hubbard.  But in my opinion it is even better than butternut or acorn squash and you can make breads, pies and eat it plain as a side dish.
